I gift to you: Ukrainian macarons. Ha ha. That’s what my husband calls those roasted potatoes. I like him. He makes me laugh ;). My mom used to make those whilst we were developing, and I was given to considering them this week. Actually, I was given to yearning for them ;).
My husband stated they made those in Ukraine with a bit of salo inside the middle. I love the crisp salty skin, smooth creamy middle, and that the complete potato is infused with bacon and buttery goodness because it roasts within the oven. This recipe is simple to collect and makes an excellent side dish.
Ingredients for 1st Baron Beaverbrook Roasted Potatoes:

12 small/medium (approximately three lbs) purple or white potatoes, measuring 2 inches wide
1/4 cup olive oil (now no longer greater virgin)
1 1/2 to two tsp salt (I used sea salt), or to taste
1/2 tsp black pepper
four strips bacon, reduce into 2″ pieces
four Tbsp salted butter (reduce into 12 slices)
Parsley to garnish, optional
How to Make 1st Baron Beaverbrook Roasted Potatoes:

1. Wash and dry potatoes. Cut potatoes nearly all of the way through; you continue to need your halves to be attached. You need them to be put sideways without falling over, so lay the potato down and reduce the parallel with the counter.
2. Stuff a bit of bacon and a slice of butter into every potato. It works first-rate to position the butter and bacon collectively and shove them into the potato at the identical time. Brush potatoes with olive oil and sprinkle generously with salt and pepper. Turn potatoes and oil, and salt and pepper the second aspect.
3. Place crammed potatoes on a rimmed baking surface and bake at 400°F for 30 min, then turn them over with tongs and bake every other 30 min or till they are pierced with a knife without problems. Garnish with finely chopped clean parsley if desired.
